Good job Stan! I sent Brandi the menu I made for Jake. I like this format because it helps to know what you are eating for the day/ week. It also helps with planning grocery etc. I have Jake eating smaller meals about every two hours. This helps keep his blood sugar level (which also fights hunger! and grouchiness). One tip with the veggies (and I love roasted veggies also!) when you get home with all your fresh veggies, cut them up and put them in sandwich bags for snacks, then you also have a cup measured out so then you cook less. I also suggest buying a food scale for your proteins. Make great use of WW online there are TONs of good recipes. So you never get bored or burnt out.

Hey Stan,

Found a recipe that I use quite often. It's not particularly Danish but it's really good and healthy :)

Beetroot patties

3-4 large beetroots (about 500 g/1,1 lb peeled weight)
1 medium sized onion (finely grated)
2-3 cloves of garlic (crushed)
2-3 tablespoons of balsamic vinegar
1½ teaspoon of salt
2 teaspoons of paprika powder
½ teaspoon of cayenne pepper
2-3 tablespoons of flour (estimated - it might need more)
2-3 cups of oatmeal (dry)

Grate the beetroots coarsely. Wear an apron - and no white clothes - it will get messy.
Add all the spices
Add oatmeal and flour - add a bit at a time. Note that you might have to add a bit more than the recipe says. Beetroots can vary in juiciness. The "dough" has to be juicy and sticky but not too much.

Mix it all together. It's okay to be rough.

Heat up a pan (medium heat, ca) and add margarine.
When the pan's ready, form the "dough" into egg-sized chunks and place them on the pan.
Turn them when they are getting crusty.

You can also make them in the oven. They won't get crusty but they're a bit healthier because they don't get fried. I prefer them fried, though ;)
I bake them at about 200 C / ca. 400 F - 30 minutes. Turn them around after 15 minutes.

These are only guidelines so note that they might need less/longer time on the pan or in the oven.

Use them as a substitute for meat and eat them with potatoes and other veggies.

Voila!

If you have any questions, ask away :)

All the best!

Perfect Danish! Or - perfekt dansk :P

I'll look for some recipes for you. I can guarantee there're more unhealthy than healthy ones - we truly are the land of bacon ;)
But I'll see if I can dig up something diet-friendly.

Happy thanksgiving!

All the best to you and the lasses :)

Uncle Ray, I am glad that you visited my blog. Yes, most vegetables and fruits with a PointsPlus value of zero in the WW's guideline. Do you want to join and go on the journey with me? :-D Happy Thanksgiving! Love ya, uncle.

Hey Stan,

I'm an old LJ friend of Brandi's. I'm not struggling with overweight but my boyfriend is. It's not not obesity but he's determined to lose 22 pounds or so.
If you boil it down to simple maths, you have to burn more calories than you eat. Of course, that's easier said than done. I see it every day.

We've set up some basic rules:
1. Rice and pasta is max. twice a week - they contain too many calories.
2. Potatoes every day (instead of rice and pasta). Yes, they do contain a lot of starch but they're filled with important vitamins as well and they'll keep you satiated for a long time.
3. Meat (dinner) max. four times a week. Eat fx soup or fish on no-meat days.
4. Fish twice a week.
5. Vegetables every day.
6. Two pieces of fruit every day. Apples are probably the most healthy and vitamin-rich kind.
7. Sweets/chips - once a week only and not in gigantic amounts. Cold turkey can be dangerous.
8. Fast food (hot dogs, pizza, burritos, etc) - once a month only. But it's better not to eat it.
9. NO sweets drinks. That goes for juice as well.
10. NO white bread. At all.
11. Exercise exercise exercise!

It's rather easy to live by these rules. Make a dinner plan every week and buy the groceries all at once if possible. The more times you need to go shopping, the more often you will be tempted to buy stuff you're not supposed to eat.

Finally - yes, it'll be bloody tough to live with chips, fast food, etc, the first weeks but that's because your body is addicted to it. It's not supposed to be! But trust me, it'll get easier.

Best of luck with everything. Stay focused.

All the best,
Charlotte.

PS: Phew, that was quite a lot of typing :P
